Tea Masala
Rose Iced Tea
3 tsp. black tea (preferably Nilgiri black tea, which produces a delicately perfumed, crystal clear iced tea)
2 heaping tsp. dried rosebuds
2 c. boiling water
2 tsp. honey (preferably Tupelo honey or another mild honey)
1/4 tsp. rose water
2 c. ice cubes or crushed ice
1.Brew the tealeaves and rosebuds in boiling water for five minutes.
2.Strain the tea and stir in the honey.
3.Chill the mixture for about three hours.
4.Pour over the ice, add rose water, stir and serve, adding more ice if needed.
